• Savory Breakfast Egg Muffins

    Perfect for meal prep or breakfast on the go, these protein-packed egg muffins are customizable, satisfying, and so easy to make.

    Total Time: 35 minutes
    Serves: 6 (makes 12 muffins)

    Instructions:

    1. Preheat oven to 350°F. Lightly grease a 12-cup muffin tin.
    2. In a large bowl, whisk together eggs and milk. Season with salt, pepper, and spicy sea salt if using.
    3. Stir in spinach, tomatoes, red onion, and feta.
    4. Pour mixture evenly into the muffin cups, filling each about ¾ full.
    5. Bake for 22–25 minutes, until the eggs are set and tops are lightly golden.
    6. Let cool slightly before removing. Store in the fridge for up to 4 days.
