Perfect for meal prep or breakfast on the go, these protein-packed egg muffins are customizable, satisfying, and so easy to make.

Serves: 6 (makes 12 muffins)Instructions:
- Preheat oven to 350°F. Lightly grease a 12-cup muffin tin.
- In a large bowl, whisk together eggs and milk. Season with salt, pepper, and spicy sea salt if using.
- Stir in spinach, tomatoes, red onion, and feta.
- Pour mixture evenly into the muffin cups, filling each about ¾ full.
- Bake for 22–25 minutes, until the eggs are set and tops are lightly golden.
