• Spicy Pumpkin Soup

    Instructions:

    1. Sauté the Aromatics
      In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
    2. Add Spices
      Stir in the cumin and cinnamon, cooking for an additional 1-2 minutes until fragrant.
    3. Combine Ingredients
      Add the pumpkin puree and vegetable broth. Stir to combine. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
    4. Blend the Soup
      Using an immersion blender (or transferring to a regular blender), blend the soup until smooth and creamy. If desired, stir in heavy cream for added richness.
    5. Season and Serve
